New year, new recipe! Start your year off with this delicious, healthy, and protein rich frittata recipe! This recipe feeds one adult and one baby.
Slice one small red potato into thin strips. Cook in a couple tablespoons of olive oil and season with salt, pepper, and smoky paprika.
After cooking your potatoes for a couple minutes on medium heat, add two slices of turkey.
Add two beaten eggs and one clove of garlic, sliced thin.
Turn heat down to low, cover, and cook until egg starts to firm up. About 5-10 minutes.
Add cheese, cover, and turn off the heat and leave on the burner until the cheese melts. (I used pepper jack and left one part of the frittata without cheese or garlic for Baby Rue).
Garnish with salt, pepper, and fresh thyme, and serve with whole wheat toast!
